Just Be Incredible

The Incredible Café is a delightful surprise in a shopping plaza two minutes from our hotel. Its bright, airy décor invited us in. The host and owner, Liz Sunwoo, a Korean-American, has fused Korean style into many of the café’s breakfast and lunch dishes. And it works beautifully. I spent a year in Korea for the US Army and know good Korean food. The Incredible Café takes it to another level as she fuses the Korean style into the American breakfast.
In 2019, the Food Network’s Restaurant Impossible featured the Incredible Cafe. To familiarize you with these shows, they take a restaurant suffering a loss of business for one reason or another and spend $10,000 to turn the place around. Lisa and I watched the show later and couldn’t believe the difference. Back then, the kitchen was a mess with the lack of help, and the menu and décor were meh. The show redesigned the dining area, and Liz added Korean items and flavors. Then, they were off. On our second visit, a busy Saturday morning, I got to speak to Liz. She told me how business was still great, and on Sundays, there was a line out the door.
On our first visit, I had the chicken and waffles in Korean style. I love me some chicken and waffles, and will try them anywhere. I even learned to say it in French if I wanted to while we were in France. The Korean style is the light, crispy way the chicken is fried, with an addition of a spicy Korean sauce. The chicken is fresh, and the sauce is spicy and sweet. Liz was able to upgrade an American breakfast and work it to excellence. I also tried a little Kimchi on the side and remembered why I still don’t like it. For the next visit, on a Saturday morning, Lisa and I shared the Nutella Crepe and the Amigo omelet. Ladies and Gentlemen and people of all types, this was the absolute best omelet I have ever eaten. The egg is light, and the omelet is full of flavors: Chorizo, Pico de Gallo, Green Chiles, Avocado, and wonderful melted cheese. If I had to live on one omelet my whole life, it would be this masterpiece cooked by Jose Sanchez, who has been with Liz for 25 years. I told Liz, you keep him for sure. That was a magnificent breakfast. This place is a must-go if you’re ever in San Diego. We enjoyed Liz’s company and the tremendous Korean fusion breakfast. Wake up right and get to the Incredible Café. Enjoy the moments everyone!
